THE TEAM

At Rosewood Calistoga, the Stewarding team plays an essential role in supporting the rhythm, quality, and operational excellence of our culinary and food and beverage experiences. As Executive Steward, you will report to the Executive Sous Chef and collaborate closely with Culinary, Food & Beverage, Engineering, Housekeeping, and other operating departments to support seamless hotel operations.

YOUR ROLE

As Executive Steward, you will lead the day-to-day operation of the Stewarding Department, ensuring the highest standards of cleanliness, sanitation, hygiene, equipment care, and operational support are consistently maintained throughout the resort.

Through a visible and hands-on leadership presence, you will guide the Stewarding team, manage departmental resources, maintain food safety and hygiene standards, and ensure operating equipment is available, cared for, and efficiently distributed. You will balance operational discipline with thoughtful leadership, helping associates grow while supporting the overall performance of Rosewood Calistoga.

HOW YOU’LL MAKE THE PLACE
  • Lead the daily operation of the Stewarding Department while maintaining Rosewood brand standards, Forbes standards, LQA requirements, HACCP practices, and applicable health regulations.
  • Maintain exceptional standards of cleanliness and sanitation throughout kitchens, restaurants, bars, banquet facilities, stewarding areas, and back-of-house spaces.
  • Establish and oversee cleaning and deep-cleaning schedules for kitchen equipment, utensils, cookware, crockery, cutlery, glassware, and operating equipment.
  • Ensure food-contact surfaces, dishwashing areas, storage areas, waste rooms, loading docks, and refuse collection points are properly cleaned and maintained.
  • Oversee the safe operation and care of stewarding machinery, chemicals, supplies, and equipment.
  • Conduct regular inspections to support consistent hygiene, sanitation, food safety, and workplace safety standards.
  • Coordinate operating equipment inventory, storage, distribution, replacement, and purchasing requirements.
  • Monitor departmental costs, labor productivity, overtime, chemical consumption, equipment breakage, and inventory variances.
  • Support meetings and events by ensuring the timely setup and breakdown of required operating equipment.
  • Create efficient schedules that align Stewarding coverage with business and operational needs.
  • Lead daily briefings, communicate priorities, and maintain professional grooming, conduct, and performance standards.
  • Coach, mentor, train, and develop Stewarding associates while supporting onboarding and ongoing learning.
  • Foster a positive, respectful, and safe working environment grounded in teamwork and open communication.
  • Collaborate across Culinary, Food & Beverage, Housekeeping, Engineering, and other departments to maintain an efficient operational flow.
  • Identify opportunities to strengthen productivity, sustainability, cost control, and the overall effectiveness of Stewarding operations.
COULD THIS BE YOU?
  • You are a hands-on and organized leader who takes pride in maintaining exceptional cleanliness, sanitation, and operational standards.
  • You bring a minimum of four years of relevant experience, including strong leadership experience in a similar position.
  • Experience within a luxury or ultra-luxury hotel or resort environment is preferred.
  • You have a high school diploma or an equivalent combination of education and relevant work experience.
  • You hold a current and valid California Food Handler’s Card.
  • You understand food safety, HACCP practices, chemical handling, sanitation procedures, machinery operation, and safe working practices.
  • You are comfortable managing multiple priorities, meeting deadlines, and adjusting staffing and resources according to business needs.
  • You are attentive to detail and able to work with accuracy, consistency, and sound judgment in a fast-paced environment.
  • You communicate clearly, remain composed under pressure, and work collaboratively across departments.
  • You are passionate, dedicated, patient, persistent, and committed to creating an environment built on trust, respect, teamwork, and open communication.
  • You are able to speak, read, and write English.
  • You can meet the physical requirements of the role, including transporting up to 50 pounds and working in an active kitchen environment with heat, cold, slippery surfaces, machinery, and cleaning equipment.
