Job summary

Meskwaki Bingo Casino Hotel in Tama, IA is seeking a Lucky’s Sous Chef to lead the Lucky’s Grill & Taproom kitchen. This full-time role requires culinary expertise, supervision of staff and adherence to safety standards to deliver high-quality food while controlling costs.

The candidate should have a culinary degree or substantial kitchen leadership experience, excellent organization, and the ability to manage scheduling, training, and inventory in a busy casino environment.

Qualifications

• Must be at least 21 years old.
• Requires a Culinary degree from an accredited institute/school or 2 years experience cooking in a large-scale, full-service restaurant operation and 1 year as kitchen supervisor.
• Knowledge of food safety and sanitation requirements.
• Basic computer or point of sale system skills.

Responsibilities

• Oversee daily kitchen operations to maximize revenue and minimize costs.
• Ensure menu items are prepared per recipes and specifications.
• Maintain food safety standards per FDA and ServSafe.
• Monitor sanitation and operate/maintain kitchen equipment.
• Train and develop new hires and supervise staff performance.
• Assist with inventory, ordering, and waste documentation.
