Job summary

Truly Pizza in Laguna Beach is seeking a Pizzaiolo/la/Head Chef to lead the pizza program, elevate menu items, and supervise the food-prep-line team. The role requires discretion in hiring, scheduling, and directing a small kitchen staff to maintain quality and consistency.

The position is exempt from overtime with executive responsibilities for menu design, training, and day-to-day kitchen operations, including safety and cost controls.

Qualifications

• Experience directing a pizza program and kitchen staff.
• Ability to design menu items and supervise food preparation.
• Excellent sanitation and safety knowledge.

Responsibilities

• Oversee the daily food preparation line functions.
• Lead and train pizza makers to maintain standards established by ownership.
• Manage scheduling and allocate tips for food-prep-line employees.
• Plan and price menu items and execute new dishes.
• Control food costs and waste following recipes and stock procedures.
• Conduct periodic safety meetings and train on safety procedures.
• Hire, fire, and discipline food-prep-line staff.
• Provide orientation and training for new employees and re-training as needed.
