Job summary

Morrison Healthcare, a Compass Healthcare company, seeks an Executive Chef to oversee kitchen operations and ensure sanitary, compliant meal preparation per corporate programs.

You will train staff, manage inventory, and optimize food quality, cost controls, and presentation across healthcare dining sites.

Qualifications

  • A.S. or equivalent experience.
  • 3–5 years of progressive culinary/kitchen management experience.
  • Extensive catering experience a plus.
  • High-volume, complex foodservice operations experience desirable.
  • Institutional and batch cooking experience.
  • Hands-on chef experience required.

Responsibilities

  • Plan regular and modified menus per guidelines.
  • Follow recipes, portioning, and presentation standards; use production worksheets and waste logs.
  • Train kitchen staff in food prep, safety, and sanitation per standards.
  • Maintain cleaning and maintenance schedules for equipment and areas.
  • Monitor inventory within guidelines to ensure availability.
  • Make decisions on leftover food within guidelines.
  • Comply with health, sanitation, and safety regulations; audit-driven.
  • Follow safety policies and participate in meetings and training.

Executive Chef

As an Executive Chef, you will oversee kitchen operations, ensuring a safe and sanitary environment, and direct meal preparation in accordance with corporate programs and guidelines.

Key Responsibilities
  • Plan regular and modified menus according to established guidelines.
  • Follow standardized recipes, portioning, and presentation standards. Complete and utilize daily production worksheets and waste log sheets. Taste completed meals to ensure quality.
  • Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas, and ensure staff follows them.
  • Maintain inventory of food and non-food supplies, staying within guidelines while ensuring product availability.
  • Make decisions regarding utilization of leftover food products, staying within company guidelines.
  • Comply with federal, state, and local health and sanitation regulations and department sanitation procedures, as evidenced through audits.
  • Follow facility, department, and company safety policies and procedures, including occurrence reporting.
  • Participate in departmental meetings, staff development, and professional programs as appropriate.
Preferred Qualifications
  • A.S. or equivalent experience.
  • Minimum of three to five years of progressive culinary/kitchen management experience, depending on formal degree or training.
  • Extensive catering experience a plus.
  • High‑volume, complex foodservice operations experience – highly desirable.
  • Institutional and batch cooking experience.
  • Hands‑on chef experience required.
  • Comprehensive knowledge of food and catering trends focused on quality, production, sanitation, food cost controls, and presentation.
  • Proficient with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, e‑mail, and the Internet.
  • ServSafe certification – highly desirable.
