Job Summary

Working as the Executive Chef, you will be responsible for overseeing culinary and kitchen purchasing/ordering operations for 2 large hospitals. This position spends 90% of work week overseeing purchasing operations: placing orders, conducting inventory, utilizing Managed Order Guides, analyzing costs/budget, following product specs, ensuring product rotation and safe food handling, and managing around 10 employees. 10% of time may be spent covering culinary operations in one of the kitchens, preparing or directing the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional.

Key Responsibilities:

1. Plans regular and modified menus according to established guidelines
2. Follows standardized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality
3. Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
4. Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned
5. Orders all food, paper, smallwares and specialty products for all kitchens, including the commissary kitchen
6. Maintains inventory of food and non-food supplies (for 2 large hospitals) to stay within established guidelines while assuring that necessary product is available when needed
7. Partner with 20+ Leaders to define menu and product needs in 3 very large patient areas, 4 very large retail areas and 5 coffee bars.
8. Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products
9. Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
10. Follows facility, department, and Company safety policies and procedures to include occurrence reporting
11. Participates and attends departmental meetings, staff development, and professional programs, as appropriate

Preferred Qualifications

1. A.S. or equivalent experience
2. 5+ years of progressive culinary/kitchen management experience, depending upon formal degree or training
3. High volume, complex foodservice operations experience - highly desirable
4. Institutional and batch cooking experiences, preferably in healthcare, casinos, hotels, higher education or K-12
5. Hands-on chef experience a must
6. Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
7. Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
8. Excellent customer service, attention to detail, ability to multi-task in a fast-paced environment and people leadership skills
9. Must be willing to participate in client satisfaction programs/activities
10. ServSafe certified - highly desirable
