Qualifications

• A.S. degree or equivalent experience required.
• 5+ years of progressive culinary/kitchen management experience preferred.
• Extensive catering and high‑volume foodservice experience desirable.
• Hands‑on chef leadership and strong food cost awareness essential.

Responsibilities

• Plan regular and modified menus according to established guidelines.
• Follow recipes, portioning, and presentation standards; manage daily production worksheets and waste logs.
• Train kitchen staff in food preparation, safety, and sanitation per company standards.
• Establish cleaning and maintenance schedules for equipment and work areas; ensure adherence.
• Maintain inventory and ensure product availability within guidelines.
• Make decisions on leftover food usage within company policies.
• Comply with health, safety, and sanitation regulations and pass audits.
• Follow safety policies and participate in staff meetings and training.

Position Title: Executive Chef I - Odessa, TX

Pay Grade: 14 | Salary: $85,000

Job Summary

Working as the Executive Chef, you will oversee kitchen operations, ensuring a safe and sanitary environment. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines and bring an energetic, entrepreneurial spirit to the role.

Key Responsibilities

• Plan regular and modified menus according to established guidelines
• Follow standardized recipes, portioning, and presentation standards; complete and utilize daily production worksheets and waste log sheets; taste completed meals to ensure quality
• Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation per company and regulatory standards
• Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas; ensure staff follows schedules
• Maintain inventory of food and non‑food supplies within guidelines while ensuring product availability
• Make decisions regarding utilization of leftover food products, staying within company guidelines
• Comply with federal, state, and local health and sanitation regulations and sanitation procedures as evidenced through audits
• Follow facility, department, and company safety policies and procedures, including occurrence reporting
• Participate in departmental meetings, staff development, and professional programs as appropriate

Preferred Qualifications

• A.S. degree or equivalent experience
• 5+ years of progressive culinary/kitchen management experience, depending on formal degree or training
• Extensive catering experience
• High‑volume, complex foodservice operations experience – highly desirable
• Institutional and batch‑cooking experience
• Hands‑on chef experience – a must
• Comprehensive knowledge of food and catering trends, focusing on quality, production, sanitation, food cost control, and presentation
• Proficient computer skills; Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and internet
• Willingness to participate in client satisfaction programs and activities
• ServSafe certification – highly desirable
