Job summary

Amante’s Italian Restaurant in South Florida is seeking an Executive Chef to lead all back-of-house culinary operations, develop seasonal menus, ensure food safety, and uphold the brand's standards.

You will hire and mentor staff, manage food and labor costs, build strong vendor relationships, and partner with leadership to deliver guest‑centric service and menu excellence.

Qualifications

  • Bachelor’s degree with major concentration in food preparation, management, nutrition or work related field.
  • 4+ years progressive work experience in high-volume food production or catering.
  • Moderate reading/writing skills; strong interpersonal and communications abilities; ability to lift up to 50 pounds.
  • Knowledge of Excel, Word, PDFs, Hot Schedules and e-Save is a plus.

Responsibilities

  • Lead back-of-house culinary operations, including food preparation, production, and presentation.
  • Develop, refine, and execute seasonal menus aligned with brand standards and cost targets.
  • Maintain food safety, sanitation, and health code compliance across kitchen areas.
  • Hire, train, mentor, and schedule culinary staff; foster a positive, performance-driven culture.
  • Monitor and control food and labor costs through ordering, inventory management, and waste reduction.
  • Collaborate with leadership to support financial goals, service excellence, and guest satisfaction.
  • Ensure recipe execution consistency, portion control, and plating specifications.
  • Lead line checks, quality inspections, and equipment maintenance oversight.
  • Build vendor relationships and negotiate pricing for top-quality ingredients.
  • Manage kitchen administration, including payroll approvals and invoicing in systems.
  • Drive kitchen peak-time performance with hands-on leadership and clear communication.
  • Pursue culinary innovation and continuous improvement in techniques and workflow.

Position Summary

Prepare and/or directs the preparation of food to be served complying with all applicable sanitation, health, and personal hygiene standards and following established food production programs and procedures. Ensure appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.

Essential Duties and Responsibilities
  • Lead and manage all back-of-house culinary operations, including food preparation, production, and presentation
  • Develop, refine, and execute seasonal menus and specials that align with brand standards and cost targets
  • Maintain strict food safety, sanitation, and health code compliance across all kitchen areas
  • Hire, train, mentor, and schedule culinary staff while fostering a positive, performance-driven culture
  • Monitor and control food and labor costs through ordering, inventory management, and waste reduction
  • Collaborate closely with leadership teams to support financial goals, service excellence, and guest satisfaction
  • Ensure consistency in recipe execution, portion control, and plating specifications
  • Conduct regular line checks, quality inspections, and equipment maintenance oversight
  • Build strong vendor relationships and negotiate pricing to ensure top-quality ingredients
  • Manage kitchen administration needs, including payroll approvals, invoice coding, and documentation in operational systems
  • Lead the kitchen team during peak service times, demonstrating hands-on support and strong communication
  • Drive innovation and continuous improvement in culinary techniques, workflow efficiency, and menu development
  • Other tasks as assigned
Minimum Qualifications (Education, Experience, Skills)
  • Bachelor’s degree with major concentration in food preparation, management, nutrition or work related field.
  • Position requires 4 (four) or more years progressive work experience in a high volume food production or catering organization. Equivalent combination of education and/or experience considered.
  • Moderate reading and writing skills; proficient interpersonal relations and communicative skills; ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing up to 50 pounds; manual dexterity; auditory and visual skills; ability to follow written and oral instructions and procedures.
  • Knowledge of Excel word, pdf’s, hot schedules and e-save are a plus.
Physical Demands and Work Environment

The work that Executive Chefs do is both physically and mentally demanding.They support the Mission, Values and Vision of the restaurant and the facility.Theysupport, cooperate with, and implement specific procedures and programs for: Safety, including universal precautions and safe work practices, established fire/safety/disaster plans, risk management, and security, report and/or correct unsafe working conditions, equipment repair and maintenance needs. They must maintain theconfidentiality of all data, including employee and operations data. They are responsible for Quality Assurance and compliance with all regulatory requirements. Executive Chefs must remain compliant with current law and policy to provide a work environment free from sexual harassment and all illegal and discriminatory behavior.

While performing their duties they must supports and participate in common teamwork including working together with all co-workers; planning and completing job duties with minimal supervisory direction, including appropriate judgment. They use tactful, appropriate communications in sensitive and emotional situations.

They must complete requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned. The incumbent must maintain skills necessary to safely and efficiently operate the following equipment and machines used in the performance of this job including but not limited to: Kitchen equipment, i.e., oven, stove, dishwasher, slicer, coffee machine, steamer, mixer, and chef's knives.
