Job summary

Qualifications

Responsibilities

• Prepares main entrees, soups, sauces, vegetables, salads, starches and desserts using basic cooking techniques.
• Transports food and non-food items to and from main kitchen and storeroom.
• Adjusts recipes to meet patient and cafeteria needs for different production levels.
• Slices, chops, portions, and refrigerates food for same day or future use.
• Maintains sanitary and safety standards per NYS Department of Health.
• Keeps non-patient areas clean and checks expiration dates on supplies.
• Provides and maintains a safe environment through preventative measures.
• Monitors and records food and refrigerator temperatures.
• Wraps and dates all food products.
• Communicates effectively with the Food and Nutrition Team.
• Assists customers with pricing questions courteously and professionally.
• Trains other employees in area of responsibility.
• Participates in Montefiore Excellence programs and continuous quality improvement.
• Performs other duties as assigned.

Job Summary Prepares all hot foods for patients, Cafeteria, Faculty Dining Room, and catered events, from soups, snacks, to entrees, side dishes and desserts using standardized recipes

Essential Functions

• 1. Prepares main entrees, soups, sauces, vegetables, salads, starches and desserts by using applied knowledge of basic cooking techniques for all food items at various cooking stations. * Food produced is palatable, cooked to a proper temperature, visually appealing and produced on schedule.
• 2. Transports food and non food items to and from main kitchen, storeroom and ingredient room

• 3. Proper quantities are produced that are necessary for patient and cafeteria and catering requirements by converting and adjusting recipes for increased/decreased production levels.

• 5.Maintains required standards set forth by the NYS Department of Health by maintaining sanitary and safety standards in the preparation and storage of all foods and maintains a clean work area.
• 6.Maintains cleanliness of non-patient areas, (i.e. unit based supply rooms, refrigerators and rolling stock). Checks expiration dates on supplies core or unit based.
• 7.Provides and maintains a safe environment through preventative and interventional measures.
• 8.Monitors and records food/refrigerator temperature.
• 9.Wraps and dates all food products.
• 10.Utilizes effective interpersonal skills to communicate and collaborate effectively with the Food and Nutrition Team.
• 11.Is responsible and accountable for own actions.
• 12.Assists customers and answers questions related to pricing and product in acourteous and professional manner.
• 13.Trains other employees in his/her area of responsibility
• 14.Actively participates, practices and promotes Montefiore Excellence, AIDET and continuous quality improvement.
• 15.Other duties as assigned.

Equipment Operation

• All food processing and cooking equipment including (but not limited to) slicing machines, can openers, food processors, mixers, food grinders, convection ovens, combo ovens, grills, steam kettles,!>lenders, steamers, broilers, and braising skillets.
• Certificate and/or courses in food preparation and cooking from a culinary arts or restaurant school.
