Qualifications

• High school diploma or equivalent
• One (1) year (12 months) of work experience that is comparable to that described in the lower level of this series
• Illinois Department of Public Health, Food Handler Training Certification (from an ANSI-accredited trainer)

Responsibilities

• Prepares food by various methods with a full variety of menu items from standardized recipes and cycle menus
• Cooks food items including grilling, baking, braising, frying, and deep frying
• Performs recipe construction and sizing for meats, poultry, fish, vegetables, soups, gravies, and vegan/vegetarian items
• Bakes bread, rolls, pastries, from scratch or mix
• Cooks quantities based on portions to be served per menus and dietary restrictions
• Cleans and inspects equipment and work areas to ensure cleanliness and safety
• Oversees and directs activities of workers in meal preparation and serving; trains employees
• Compiles and maintains records of food use, inventory, and reports; plans disposal of leftovers with supervisor approval
• Performs other related duties as assigned
