Position: Cook 2
The Four Seasons Resort Hualalai is looking for a Cook 2 who shares a passion for excellence and infuses enthusiasm into everything they do. The Cook 2 will shape our guest experience by providing exceptional knowledge of the resort and exemplifying the Golden Rule in each interaction. Working across breakfast, lunch, and dinner, you will prepare food items per guest orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
Earn a $1000 gross sign‑on bonus, paid after successfully completing your 90‑day probationary period and probationary review. Internal applicants within Four Seasons are not eligible for the sign‑on bonus.
What You'll Do
- Work harmoniously and professionally with co‑workers and supervisors.
- Operate, maintain, and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat‑top grill.
- Date all food containers and rotate as per policies, ensuring perishable items are kept at proper temperatures; check pars for shift use and prepare accordingly.
- Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
- Lead by example and delegate to Cook 3 and Cook 4.
- Be available to work any and all shifts.
- Make decisions on quality, timing and special requests.
- Maintain a professional and productive working relationship with FOH.
- Articulate solutions for challenges regarding product, staffing or timing in a professional manner.
- Produce daily specials and cost accordingly.
- Cover Cook 1 on days off when required.
- Occasionally train new colleagues and assist with cross‑training initiatives.
- Ensure safety of staff and guests, manage allergies, equipment training, and temperature control.
- Prepare food items according to guest orders at consistent quality following recipe cards, production, portion, and presentation standards.
- Avoid over‑production and prepare only as needed.
- Lead projects throughout the year as designed by the Chef.
- Ensure proper timing/pace during service from your station to meet or exceed FS standards.
- Assist with ordering product for your station.
- Create specials and communicate/taste/explain/cost them in a timely fashion with FOH.
- Use guest comment cards to meet or exceed agreed objectives and find innovative ways to positively affect scores.
- Adhere to Steritech/Health department standards.
- Be fully capable of working in a variety of stations, mastering at least two.
- Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in OhanaPact (EmPact).
- Assist chefs in meeting monthly food cost objectives.
- Control food waste, over‑production and spoilages.
- Ensure proper rotation, labeling and dating of all products daily.
- Follow posted schedule; any deviation must be pre‑approved by a Chef or Cook One.
- Work forty hours over a five‑day period; schedule days and times may vary with potential overtime.
What to Bring
- High school education or culinary institute education or equivalent experience.
- Minimum two years of culinary or related work experience; advanced culinary knowledge expected.
- Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card when working in food and beverage.
- Legal work authorization in the United States.
- Weekend availability required.
