Main Purpose of Job

Supervises Correctional Dietary Officers who are responsible for supervising incarcerated individuals in the preparation and serving of meals in a correctional facility.

POSITION DUTIES
  • Monitors and maintains inventory of food and supplies and submits requisitions for adequate amounts needed. Ensures that officers monitor incarcerated individual preparation and serving of food & usage of supplies to minimize waste. Reviewing and determining appropriateness and accuracy of supplies and food deliveries from Central Kitchen and Central Warehouse.
  • Directly supervises Correctional Dietary Officers including providing proper training. Counseling, instructing, directing or disciplining of subordinate staff as necessary in response to behavior factors. (Performance evaluation program) Prepare and maintain subordinate leave record and work schedules. Instruct an enforce Standards of Conduct. Instructs or informs subordinates regarding program expectations and operational goals.
  • Ensure that all food service audit reports are accurately completed in a timely manner. Preparing required periodic reports to program managers regarding food service operations in units supervised. Reviewing sanitation, meal count, and food temperature reports from subordinates determining appropriate action in response.
  • Monitors and enforces use and repair of all food service equipment. Assesses situations and takes appropriate action to intervene in disturbances, missing utensils/tools, or other situations that may involve security.
  • Enforce relevant policies, procedures, directives, post orders, regulations, and recommend standards of practice to ensure compliance of all regulatory agencies and/or institutional policies. Coordinating food service operations with institutional management. Preparing recommendations for institutional food service policies, procedures, and guidelines.
  • Inspecting food service facilities, equipment, and operations to evaluate compliance with standards of sanitation, quality and efficiency. Ensure compliance with all departmental policies, include sexual harassment and its specific. Requirement for management's prompt and effective attention, reporting and response to such complaints.
  • Assess situation and takes appropriate action to intervene disturbances, missing utensils/tools, or other situations that may involve security.
Minimum Qualifications
  • Education: Graduation from an accredited high school or possession of a high school equivalency certificate acceptable to the Maryland State Board of Education as described in the Correctional Training Commission regulation.
  • Experience: Three years of experience involving the custody, security and supervision of adult inmate workers in a food operation of a correctional institution.
Notes
  • The above educational requirement is set by the Maryland Correctional Training Commission in accordance with Correctional Services Article, Section 8-209.
  • Candidates may substitute U.S. Armed Forces military service experience in correctional institutional specialty codes in the criminal justice field of work at a rate of two years of military experience for the required experience.
LICENSES, REGISTRATIONS AND CERTIFICATIONS
  • Employees in this classification may be assigned duties which require the operation of a motor vehicle. Employees assigned such duties will be required to possess a motor vehicle operator's license valid in the State of Maryland.
  • Some positions in this classification may require employees to obtain the appropriate State of Maryland driver's license to operate motor vehicles for the transportation of inmates or supplies.
Special Requirements
  • Employees who have not already done so must meet the selection standards required and successfully complete the training prescribed by the Maryland Correctional Training Commission for a Correctional Officer during their probationary period (Correctional Services Article, Section 8-209). Selection standards for correctional officer training are listed in detail in the Code of Maryland Regulations Title 12, Subtitle 10, Chapter 01 and include the following:

U.S. Citizenship or Resident Alien status

Must be at least 21 years of age

A completed background investigation

Oral interview

Physical examination.

  • Employees in this classification are subject to substance abuse testing in accordance with Code of Maryland Regulations 17.04.09, Testing for Illegal Use of Drugs.
