Job summary

Presbyterian Healthcare Services seeks a qualified Cook for the Kaseman Hospital location in Albuquerque. The role involves preparing hot and cold items for all department areas, following recipes, and contributing to cold prep, Grab & Go, bulk production, and retail operations.

Qualifications

  • Five to ten years experience in high volume preparation and cooking in a hotel, restaurant, cafeteria, catering firm, government, or private institution.
  • Or internal candidate that demonstrates competency in all shifts in the kitchen and as a shift charge person.

Responsibilities

  • Prepare hot food items for the next day as indicated by menu cycle.
  • Fruit and vegetable preparation, food portioning, and other bulk food preparation.
  • Prepare Grab and Go and other retail items.
  • Routine cleaning and sanitation of all areas.
  • Assist with serving food items as indicated by established workflow.
  • Utilize flat-top grill, convection oven, tilt skillet, steamers, and stand mixer.
  • Must be able to follow recipes for cooking.
  • Prepare food using various cooking methods, including pan frying, sauteing, boiling, grilling, baking/roasting, simmering, steaming, braising, stewing, blanching, and poaching.
  • Perform cooking, plating, and completion of dishes in view of and while interacting with customers.
  • Demonstrate proficiency in diet orders and knowledge of where to find the information.
  • Follow food service safety practices and procedures, including temperature control.
  • Prepare meals based on dietary needs and special requests.
  • Read recipes, calculate conversions, and forecast volumes.
  • Assist in the training of staff.
  • Deliver trays to patients.
  • Demonstrate competency in knife skills.
  • Register sales on assigned cash register and provide visitors with courteous, friendly, and efficient checkout service.
  • Act as person in charge when coordinator is not on site.
  • Perform other duties, including putting away orders, dishwashing, sweeping, mopping, and taking out trash.

Summary:
