Job summary

Cantex Continuing Care Network is seeking a Cook/Assistant Chef at Coronado at Stone Oak in San Antonio, TX 78258. This full-time role focuses on preparing patient meals per approved menus in a sanitized environment and in compliance with regulations.

The position requires a current Food Manager Certificate and prior-quality food preparation experience in healthcare or long-term care, with English language proficiency. Training and supervision of Nutrition Services staff may be involved.

Qualifications

• Experience in quality food preparation in long-term care or healthcare setting preferred.
• Ability to read, write, and speak English.

Responsibilities

• Prepares or directs preparation of food items on assigned/scheduled menus.
• Adheres to production schedules and minimizes waste.
• Labels, dates, and stores food items/leftovers after use.
• Maintains sanitation of equipment, utensils, and work areas.
• Prepares special items, meals, and snacks as required.
• Checks tray accuracy for flavor and temperature before serving.
• Maintains inventories and notifies of shortages or discrepancies.
• Ensures compliance with policies and regulations for food prep.
• Trains or supervises new Nutrition Services staff when needed.
• Maintains accurate temperature logs for food storage equipment.

Job Summary:

The overall purpose of the Cook/Assistant Chef position is to ensure that Patient meals are properly prepared/cooked and apportioned according to authorized menus in a timely manner. This position ensures all meals are prepared in a sanitized environment and in accordance with local, state, and federal guidelines and regulations.

Qualifications:

• Current state Food Manager Certificate.
• Experience in quality food preparation and production in either long-term care or healthcare setting is preferred.
• Ability to read, write, and speak the English language.

Essential Functions:

• Prepares or directs preparation of food items on assigned/scheduled menus.
• Adheres to food production and usage schedules and avoids waste.
• Appropriately and immediately labels, dates, and stores food items/leftovers after use.
• Makes sanitation of equipment and utensils, all work, and storage areas by cleaning immediately after use.
• Prepares or directs preparation of special items, meals, and snacks.
• Prepares special snacks and supplements as instructed by Nutrition Services Director/Chef and identifies with patient name, room number, date, and time.
• Identifies and corrects safety hazards in food service areas.
• Assists in establishment and maintenance of perpetual supplies inventory and notifies Nutrition Services Director of shortages or discrepancies.
• Complies with established policy, practices, and standards for food preparation.
• Log and records temperatures of food, refrigerators, freezers, and dispensers as appropriate.
• May assist in the training, orientation and supervision of newly hired Nutrition Services staff when assigned as a PIE (Partner in Excellence).
• Instruct and supervise workers in maintenance and care of equipment in absence of the Nutrition Services Director/Chef.
• Orient and instruct new employees in regulations and policies in conjunction with the Nutrition Services Director.
• Determine that food is prepared and served on trays as attractively as possible and that the flavor and temperature are correct (check trays as they leave department).
• Assist in standardization of recipes to meet menu needs.
• Maintain portion control of foods served.
• Assist in checking food supplies on food order forms as they arrive from vendors.
• As needed, unpack and store food and supplies as they arrive.
• Maintain orderly and correct storage of all food items, dry storage, freezer storage, and refrigerator storage.
• Prepare tray cards in the absence of the Nutrition Services Director/Chef/Ticket Aide.
• Ability to function as a Team Leader/Role Model.
• Has reviewed Cantex Continuing Care Network Clinical Policies and Procedures for Abuse Prevention and knows the employees responsibility to enforce it.
• Attends weekly in-services, understands, and complies with Patient Care Management Systems.
• Responsible for assuring patient/resident safety.
• Performs other duties and tasks as assigned.
