Job summary

Penn Entertainment's Hollywood Gaming at Mahoning Valley Race Course in Austintown Township, OH, is seeking a cook to join our fast-paced kitchen team. You will prepare breakfast items, entrees and desserts, following guest requests and health standards.

You will maintain current knowledge of menu items, practice proper cooking methods, and ensure a clean, safe workstation while delivering friendly, professional service to guests and team members alike.

Qualifications

• One year of cook experience in high-volume food service.
• High School diploma or equivalent.
• Ability to follow recipes and safety guidelines.
• Serve Safe certification is required.

Responsibilities

• Provide fast, friendly customer service to guests.
• Maintain current information about food items and preparation techniques.
• Prepare food items per guest order including breakfast, entrees, and desserts.
• Cook to specifications and handle food safely and hygienically.
• Slice, dice, chop and prepare raw products.
• Carve meats, portion plates, add gravies and garnish as required.

• Maintain par levels and request stock from warehouse as needed.

Responsibilities

• Providing fast, friendly, professional and responsive customer service to culinary team members and guests. Greets, and makes welcome, each guest approaching their station.
• Maintaining current and accurate information regarding food items, preparation techniques, seasonings, ingredients.
• Preparing food items per guest order as required including, but not limited to, breakfast items, entrees and desserts according to guest request.
• Employs proper cooking methods, cooks to specifications, and handles, stores and rotates food properly in accordance with established health and safety standards.
• Slicing, dicing, chopping and prepare raw products.
• Carving meats, portioning food on serving plates, add gravies and sauces, and garnish plates as required.
• Wiping counter areas, sinks and floors as required to maintain a clean and safe work station.
• Maintaining cleanliness of designated areas as directed in accordance with established health and safety standards.
• Maintaining par levels of operating supplies and food product for each workstation obtaining replacement stock from warehouse inventory in accordance with procedure.
• Operating and maintaining all equipment and utensils as required in accordance with established guidelines and safety procedures.
• Knowing and promoting current events and programs and can give guests directions to all area.

Requirements

• Must be able to obtain Serve Safe certification.
• Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment.
• Basic knowledge of food preparation techniques.
• Required to taste and smell foods.
• Knowledge of weights, measures and recipe yield.
• Possess and maintain culinary tools (knives) to perform the necessary job functions.
• Must be able to tolerate areas with high temperatures.
• Must be able to tolerate industry standard chemicals used for cleaning and sanitizing.
• Must present a well-groomed appearance.
• Other duties, as needed.

Education and/or Experience: One year prior experience as cook in high volume food service operation; High School diploma; or equivalent combination of education and experience.

Language Skills: Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in in English may also be required.

Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of America money and weight measurement, volume and distance. Possess ability to operate an adding machine and have basic computer skills.

Reasoning Ability: Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

Certifications, Licenses, Registrations: Employee must be able to qualify for licenses and permits required by federal, state and local regulations.

Physical Demands: Physically mobile with reasonable accommodations including ability to push, pull, carry and lift up to 50 lbs., and the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces.
