Job summary

Seneca Resorts & Casinos is seeking a Cook for Thunder Mountain Buffet. The position requires following recipes, maintaining cleanliness, and producing high‑volume dishes with quality. The role starts at $16.16 per hour with a $1,500 sign‑on bonus and negotiable compensation based on experience.

Qualifications

• Must be 18 years or older upon employment.
• High school diploma or equivalent preferred.
• One year experience in professional food service preferred; basic cooking skills required.
• Previous customer service experience preferred.

Responsibilities

• Complete prep work such as cutting and preparing food items.
• Prepare and heat soups, sauces, meats, starches, fish, seafood and vegetables.
• Back-up front line by preparing and assembling dishes for cooks and servers.
• Prepare menu items to order during high volume periods.
• Notify Sous Chef when supplies are running low.
• Follow production sheets and recipes to maintain standards.
• Maintain clean work areas, utensils and equipment.
• Regulate oven, broiler and grill temperatures.
• Ensure proper food temperatures per standards and regulations.

Cook, Thunder Mountain Buffet

The Cook is expected to have the ability to perform both large volume cooking and small quantity cooking. The Cook must have the ability to follow production sheets and recipes accurately. It is essential that they maintain a clean and safe work environment. All functions will be performed within the guidelines of the Seneca Gaming Corporation’s policies and procedures, Internal Control Standards and objectives.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES

• Complete prep work such as cutting/preparing food items that are needed.
• Prepare and heat soups and sauces, meats, starches, fish, seafood & vegetables.
• Perform back-up functions for the front line such as preparing and assembling dishes for front cooks and servers.
• Prepare menu items to order as needed during high volume periods.
• Notify Sous Chef in the event that supplies are running low.
• Prepare all food items with strict adherence to food specifications set out in recipe manual.
• Assemble supplies and equipment needed for daily cooking activities.
• Review production schedule to determine food requirements including variety and quantity of food preparation.
• Follow production sheets and other records as required.
• Maintain clean work areas, utensils, and equipment.
• Regulate temperatures of ovens, broilers and grills.
• Use a variety of pots, pans, and equipment to prepare food.
• Maintain proper food temperatures in accordance with regulatory and/or ServSafe standards

Education/Experience

• 1. Must be 18 years of age or older upon employment.
• 2. High school diploma or equivalent preferred.
• 3. One (1) year experience in professional food service preferred. Basic fundamentals of cooking skills required.
• 4. Previous customer service preferred.

Language Skills and Reasoning Ability

• 1. Must possess good communication skills including the ability to read, write and speak effectively to employees as well as customers.
• 2. Understand and comply with policies and procedures, daily memos, chemical labels and other instructions.

Salary Starting Rate: $16.16/hour
Compensation is negotiable based on experience and education.
