Job summary

Chartwells Higher Education Dining Services at CSU Monterey Bay is hiring a full-time Chef/Sous to support kitchen operations. The role involves helping Executive Chef with prep, coordinating cooks, and overseeing food-service staff in the absence of the Executive Chef.

Location is Seaside, CA, with a Wednesday–Sunday schedule. The position offers varied shifts and includes benefits like a safety shoes stipend and shift meals. Prior supervisory and culinary experience is preferred.

Qualifications

  • Previous scheduling, ordering, inventory, staff management experience preferred.
  • Experience with culinary trends, batch cooking, recipe adherence and allergen trainings a plus.
  • Strong food safety practices and customer service focus desired.

Responsibilities

  • Cooks and prepares food following approved recipes and production standards.
  • Supervises hourly food service associates including interviewing, scheduling, payroll and training.
  • Maintains sanitation and proper food handling; ensures serving temperatures and presentation meet standards.
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner.
  • Monitors inventory and deliveries; notes shortages to supervisor; supports peak service hours.

  • We are hiring immediately for full time CHEF, SOUS positiona.
  • Address: 100 CAMPUS CENTER, BLDG 16. Seaside, CA 93955 Note: online applications accepted only.
  • Schedule: Full time schedule: Wednesday - Sunday. Varying shifts available. Open availability preferred. More details upon interview.
  • Requirement: Previous Scheduling, Ordering, Inventory, Staff Management, Culinary Trends, Batch Cooking, Recipe Adherence, Allergen Trainings, Food Safety, Customer Service and Training experience preferred.
  • Perks: $55 towards Safety Shoes, Shift Meal, Cell Phone Stipend!
  • Fixed Pay Rate: $27.00 per hour
Job Summary
Summary:

Helps Executive Chef prepare and cook foods. Coordinates activities of cooks and other food-service associates. Assumes responsibility for kitchen and food-service associates in the absence of Executive Chef.

Essential Duties and Responsibilities
  • Cooks and prepares food following approved recipes and production standards. Ensures all deadlines are met based on production orders.
  • Supervises hourly food service associates. Includes interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate.
  • Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures.
  • Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures.
  • Maintains sanitation of equipment, supplies and utensils. Cleans workstation thoroughly before leaving area. Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements.
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner. Relays relevant information directly to supervisor.
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers.
  • Keeps up with peak production and service hours.
  • Monitors inventory and deliveries of product and supplies. Tracks product production, consumption and waste. Informs supervisor when supplies or product are low.
  • Performs other duties as assigned.
