Job Summary:

The Chef de Cuisine is responsible for directing and participating in the preparation, seasoning, and cooking of various dishes, including salads, soups, meats, and desserts. This role involves ordering supplies, maintaining records, and ensuring the highest standards of food quality, sanitation, and presentation are met.

Essential Functions and Duties:
  • Ensures the quality of raw and cooked food products meet required standards.
  • Monitors sanitation practices to ensure compliance with regulations.
  • Inspects received products for quantity and quality.
  • Orders and requisitions food and supplies for efficient kitchen operation.
  • Supervises and coordinates the activities of cooks and kitchen workers.
  • Inspects supplies, equipment, and work areas for cleanliness and conformance to standards.
  • Determines how food is presented and creates decorative food displays.
  • Instructs cooks and kitchen staff in food preparation, cooking, garnishing, and presentation.
  • Estimates the amounts and costs of required supplies and ingredients.
  • Collaborates with other personnel to develop recipes and menus based on ingredient availability and expected guest numbers.
  • Maintains consistent attendance and adheres to high standards of personal appearance and grooming.

Required Experience, Education, and Skills:
  • College or university program certificate; or 2-4 years of related experience and/or training; or an equivalent combination of education and experience.
  • Strong knowledge of food preparation, presentation, and sanitation practices.
  • Ability to supervise and coordinate kitchen staff activities.
  • Proficiency in basic computer functions, including MS Office, Outlook, Word, and Excel.
  • Strong communication and leadership skills to manage the kitchen and ensure food quality standards.
  • Flexibility to work in a fast-paced kitchen environment.
Work Environment:
  • Works in a kitchen environment with exposure to high temperatures.
  • Frequent exposure to cleaning chemicals throughout the day.
  • Stands for more than 90% of the shift and walks more than 50% of the time.
  • Uses hands to handle or feel for more than 90% of the shift.
  • Regularly lifts up to 50 lbs. and pushes/pulls up to 50 lbs.
