Job summary

Pechanga Resort Casino is seeking an Assistant Banquet Chef to oversee daily culinary operations and support the Executive Sous Chef in achieving departmental targets. You will guide team members, enforce safety standards, and contribute to menu execution and training programs.

The role requires strong leadership, hands-on cooking skills, and the ability to manage food costs while delivering high-quality banquet experiences. Must be able to work varied shifts, including weekends.

Qualifications

• Proficient with Word and Excel; familiarity with scheduling and timekeeping systems.
• Strong knowledge of health and safety standards/laws.
• Understanding of all kitchen and culinary operations.
• Interpersonal and organizational skills.
• Familiar with local, regional, national, and international cuisines.

Responsibilities

• Provide leadership to kitchen staff in preparing high-quality meals per dietary requirements.
• Identify defects and implement quality improvement procedures; maintain sanitation and safety.
• Manage food, labor costs and controllable expenses to meet financial objectives.
• Train staff on new techniques, recipes, and equipment to enhance culinary experience.
• Oversee daily kitchen operations; ensure proper tool availability and safe food handling.
• Monitor walk-in coolers/freezers for proper rotation and storage of items.
