Location

A substantial part of the 200-acre Viking Lakes mixed-use development, this destination is home to the Minnesota Vikings headquarters, Twin Cities Orthopedics Performance Center, and TCO Stadium. The location is easily accessible from downtown Minneapolis and St. Paul, the Mall of America, and the airport. The planned development also includes corporate offices, retail, restaurants, and entertainment.

The 320-room luxury hotel features over 35,000 square feet of indoor and outdoor meeting and pre-function space, including a 7,500-square-foot ballroom, a 4,410-square-foot event center, and six two-story hospitality lounges for groups and meeting planners. It caters to a variety of events, from small meetings and conferences to large galas, tailgates, and more, supported by multiple food and beverage venues, a signature spa, and state-of-the-art fitness facilities.

Job Description

Omni Viking Lakes Hotel is seeking a Banquet Cook 1. This team member will ensure the efficient running of the banquet kitchen, minimizing operating costs, and adhering to all hotel policies and standards within budget. The role involves advising the Food and Beverage Director on kitchen matters, maintaining high standards of cleanliness and hygiene in collaboration with the Stewarding Department.

Salary starts at $23.00/hour, based on experience. Responsibilities

  1. Assist the Food and Beverage Director in budgeting, controlling food costs, payroll, and overheads; report variances with reasons and recommendations.
  2. Collaborate with other managers on market potential and menu design, passing standards recipes for costing.
  3. Participate in capital expenditure planning for the department.
  4. Ensure guest satisfaction and smooth daily operations.
  5. Maintain standards for purchasing, receiving, and product quality, working with storeroom and controller.
  6. Forecast food quantities to maximize profitability, oversee recipe creation, and assist in banquet menu development.
  7. Inspect outlets during service to uphold standards.
  8. Manage equipment and schedule maintenance.
  9. Stay updated on market trends and competitor offerings to innovate food products.
  10. Promote in-house culinary activities and participate in recruitment, training, and development of kitchen staff.
  11. Handle administrative tasks, attend meetings, and participate in departmental planning and events.
  12. Engage in VIP projects, uniform ordering, student training, and recruitment trips.

Qualifications

  1. Customer service experience preferred; strong organizational and communication skills.
  2. Minimum 5 years as Chef or Executive Sous Chef.
  3. Serve Safe Certified Food Manager.
  4. Culinary education preferred but not mandatory; bilingual skills advantageous.

Physical Requirements

  • Sitting, typing, and writing for long periods; standing, walking, bending, reaching, and lifting up to 50 pounds.

Working Environment

  • Indoor hotel environment with exposure to humidity, steam, temperatures, and cleaning chemicals.

  • Computer, printer, telephone, photocopy machine, facsimile.
