Job Overview

To ensure proper service from the front line through quality control and maintaining proper sanitation levels.

Responsibilities
  • Check all items against the recipe cards, verify that use records are followed for all items served, and that food is presented in an efficient, quality manner.
  • Monitor the line setup prior to all meal functions to ensure maximum efficiency during meal periods.
  • Monitor equipment maintenance and kitchen "clean as you go" policy to ensure strict adherence.
  • Prepare food of consistent quality following recipe cards and production and portion standards, per dupe from servers.
  • Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
  • Date all food containers and rotate as per SOP, ensuring all perishables are kept at proper temperatures.
  • Check pars for shift use, determine necessary preparation, freezer pull, and line setup.
  • Note any out-of-stock items or possible shortages.
  • Assist in keeping buffet stocked.
  • Return all unused food items on next shift to designated storage areas, covering and dating all perishables.
  • Assist in planning and implementing actions to correct food cost issues; control food waste, loss, and usage per SOP.
Qualifications

Education/Formal Training

High school education or equivalent.

Experience

One to two years of employment in a related position with this or another organization.

Knowledge/Skills

  • Ability to work as a team member and communicate effectively with kitchen staff.
  • Knowledge of cooking practices and procedures to perform analytical work.

Physical Demands

The physical demands include lifting up to 70 lbs, climbing, bending, full mobility, standing for long hours, and moderate hearing and vision for effective communication and food preparation. Reasonable accommodations may be provided for individuals with disabilities.

  • Regular lifting, pushing, pulling, and carrying of food and equipment.

Environment

Primarily indoor work (95%), with temperatures ranging from -10°F in the freezer to over 100°F on the front line.
