Job description

At Oak Island Resort & Conference Centre, we have an immediate opening for a Banquet Chef! If you are an experienced and dynamic individual with a passion for motivation and committed to the execution of a spectacular event, we want you!

Responsibilities:
  • Direct, coordinate and participate in food preparation, mainly for banquets but may include dining room.
  • Maintain food production to business levels and monitor work performance. Direct and coordinate activities of banquet crew.
  • Plan and price banquet menus with assistance from catering manager and management team; taking into account such factors as seasonal availability of ingredients and the business volumes.
  • Assist food and beverage controller with food cost controls, food tracking and inventories to ensure budgeted food costs.
  • Assist with ordering of supplies. Participate in the verification of all purchases to ensure quality and account for each delivered item.
  • Comply with nutrition and sanitation regulations and safety standards and ensure that crew is responsible for the same.
  • Assist with recruitment and scheduling according to business and projected goals for labour budget.
  • Responsible for the management, training, coaching and mentoring of banquet crew, fostering a climate of cooperation and respect between co-workers.
  • Plan and conduct period/monthly meeting with banquets team.
  • Meet with customers to discuss catering and special needs as required.
  • Attend and participate actively in all required meetings, trade shows, and develop proactive relationships with partners, schools, suppliers and accounts.

What You Need to Succeed:
  • Diploma or equivalent from an accredited culinary program.
  • Minimum 3 years experience in a similar environment.
  • Red Seal Certification required.
  • Previous experience managing, coaching and mentoring a team.
  • Excellent knowledge of Hot Line, Restaurant and Banquet production.
  • Excellent knowledge of kitchen safety standards and procedures.
  • Excellent communication and organizational skills.
  • Able to work with limited guidance in a fast paced environment.
  • Able to lift, pull, and push up to 30 pounds.
  • Able to work flexible hours, including evenings, weekends and holidays.
