Job summary

Yaamava' Resort & Casino at San Manuel is seeking a Baker under the direction of the Assistant Pastry Chef to oversee daily Bakery operations, prepare baked goods per recipe, and maintain kitchen cleanliness. You will measure ingredients, decorate items, and ensure proper usage of pastry tools in a fast-paced environment.

Requirements include a high school diploma or GED, a culinary degree preferred, and at least two years of high-volume pastry experience.

Responsibilities

• Prepares items according to recipe standards.
• Maintains knowledge of all bakery products, their characteristics, uses, and storage requirements; applies precise measurements for consistency and quality.
• Labels and dates all food products; follows FIFO; disposes of expired items properly.
• Maintains knowledge of department policies and reports discrepancies, accidents, hazards to management.
• Performs other duties to support efficient operation of the department.

Job description

Under the direction of the Assistant Pastry Chef, the Baker is responsible for the daily operation of the Bakery including the preparation of baked products and pastries according to established recipes. Maintains the cleanliness of the kitchen and ensure the proper usage of the pastry kitchen tools and equipment.

Essential Duties And Responsibilities

• Combines all standard mixes and ingredients for cakes, pies, brownies, breads, and specialty pastries as assigned. Mixes, bakes, and finishes all products as necessary. Garnishes all service trays, cakes, and pastries for proper presentation. Prepares all items according to recipe standards.
• Maintains a comprehensive understanding of all food products utilized in the Bakery, including their characteristics, uses, and storage requirements. Utilizes precise measurements to ensure consistency and quality in food preparation. Applies basic knife skills effectively ensuring ingredients are prepared accurately and safely.
• Provides support to the Assistant Pastry Chefs in the preparation and presentation of special functions and projects.
• Demonstrates knowledge of the First-In, First-Out (FIFO) for all products. Labels and dates all food products at their respective station and the Bakery as a whole. Certifies expiration dates are met and disposes of expired items properly.
• Maintains complete knowledge of and complies with all department policies, service procedures, and standards. Reports all discrepancies, accidents, and hazards to management.
• Performs other duties as assigned to support the efficient operation of the department.

Education, Experience And Qualifications

• High School Diploma or GED required.

LICENSES, CERTIFICATIONS AND REGISTRATIONS

• At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
• Must obtain and maintain a current Food Handler’s Card.
• No Driving Responsibilities: Role does not require a driver’s license or insurance.

Physical Requirements/ Working Conditions – Environment

• Primary work environment is in a climate-controlled commercial kitchen setting.
• Work requires travel to attend meetings, trade shows, and conferences.
• Incumbents may be required to work evening, weekend and holiday shifts.
• Must be able to work in a fast-paced, high-demand environment.
• Strength sufficient to exert up to 10 pounds of force occasionally and/or a negligible amount of force frequently or constantly to lift, carry, push, pull or otherwise move objects and/or move up to 40 pounds occasionally.
• Sedentary work: involves sitting most of the time. Constantly operates a computer and other office productivity machinery, such as a calculator, copy machine, and computer printer.
• Physical activities that apply to the essential functions of the position are balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, and repetitive motions.
• Hearing sufficient to hear conversational levels in person, via videoconference and over the telephone.

• Visual acuity that meets the requirements of the position: The worker is required to have close visual acuity to perform an activity such as preparing and analyzing data and figures; transcribing; viewing a computer terminal; expansive reading and visual inspection of employees, visitors or facility.
• Mobility sufficient to safely move in an office environment, walk, stoop, bend and kneel, and enter, exit and operate a motor vehicle in the course of travel to promotional events, meetings, conferences, trade shows and San Manuel properties.
• Endurance sufficient to sit, walk and stand for extended periods, and maintain efficiency throughout the entire work shift and during extended work hours.
