Funding Source:
Supervise, train, and manage campus food service operation. Ensure that appropriate quality and quantities of food required by Texas Department of Agriculture are prepared and served. Meet time constraints set by menu requirements established by Child Nutrition Program administration. Meet health codes and reimbursable menu requirements, which meet or exceed standards, set forth by Federal, State, and local regulatory agencies.
High School Diploma or GED (English) Certified by TASN
Food manager certification Level 1 Certification preferred Food Handlers Certified
Knowledge of methods, materials, equipment, and appliances used in food preparation Ability to manage and supervise personnel
Effective planning and organizational skills
Ability to lift objects that weigh approximately 16-18 lbs.
Work in teams when lifting objects that weigh more than 18 lbs.
Have basic computer skills and able to use it to communicate, record and produce information. Knowledge of weights and measures.
Knowledge on reading and understanding recipe.
Three years experience in institutional food service operations

Major Responsibilities and Duties:
Supervise and evaluate one or more food service workers assigned to campus cafeteria.
Tools/Equipment Used:
Standard large and small kitchen equipment and tools including electric slicer, mixer, pressure steamer, deep- fat fryer, sharp cutting tools, stove, oven, dishwasher, and food/utility cart
Prolonged standing; frequent kneeling/squatting, bending/stoop, pushing/pulling, and twisting
Continual walking; frequent climbing (ladder), grasping/squeezing, wrist flexion/extension, reaching/overhead reaching
Frequent moderate lifting and carrying (15–44 pounds)
Work inside in commercial kitchen environment; exposure to extreme hot and cold temperatures, extreme humidity, noise, vibration, microwaves, biological hazards (bacteria, mold, fungi), chemical hazards (fumes, vapors, gases), electrical hazards; work with hands in water; work around machinery with moving parts; work on slippery surfaces
Work with frequent interruptions; maintain emotional control under stress
