Dickies Arena is a 14,000 seat, multipurpose venue located adjacent to the Will Rogers Memorial Center in Fort Worth, Texas. Owned by the City of Fort Worth and managed by Trail Drive Management Corp (TDMC), it hosted 172 events last fiscal year and was ranked 4th worldwide for gross ticket sales by Billboard in early 2023. Reports to: Pastry Chef

Job Description

The Full-time Pastry Chef will oversee all dessert production across concessions, suites, clubs, and catering in the absence of the Pastry Chef. Responsibilities include menu development, event planning, and ensuring quality and sanitation standards are met. The role involves collaboration with culinary and front-of-house teams to provide high-quality options tailored to guest demographics. The Pastry Supervisor will also assist in achieving financial targets related to labor and food costs and support all Food & Beverage outlets as needed.

Qualifications
  • Minimum 2 years of culinary baking experience.
  • Experience in high-volume, complex food service operations; experience in sports/entertainment venues preferred.
  • Expertise in baking, pastry, and chocolate work, emphasizing quality, sanitation, cost control, and presentation.
  • Ability to complete projects reliably and within deadlines.
  • Proficiency in MS Office and experience with workforce management and inventory software is preferred.
  • Excellent communication skills, ability to work independently and as part of a team, and superior customer service skills.
  • Availability for extended shifts, including nights, weekends, and holidays, and ability to work in fluctuating temperatures.
Essential Duties
  • Collaborate with the Food and Beverage leadership team to ensure successful operations.
  • Assist with policy enforcement and operational procedures.
  • Support concept development for dessert menus and pastry needs, considering seasonal trends.
  • Hire, train, schedule, and mentor bakery team members, ensuring they have necessary tools.
  • Maintain consistency in recipe execution and presentation.
  • Manage pastry kitchen operations, including inventory, quality control, and safety compliance.
  • Engage with guests and staff to ensure excellent service and hospitality.
  • Enforce safety, security, and sanitation standards throughout the venue.
  • Gather guest feedback to improve operations.
  • Utilize systems like Purchasing, Eatec, and Workforce Management accurately.
Work Environment and Physical Demands

This role requires multitasking under pressure, attention to detail, and effective communication. It involves frequent movement, including standing, walking, and lifting up to 50 pounds, with occasional assistance for heavier loads. The work is primarily indoors, with exposure to outdoor conditions and extreme temperatures during equipment use.
