The original El Encanto Restaurant and Cantina opened in 1989 in the center of Cave Creek, Arizona. Its success allowed us to expand the Sights, Sounds, and Tastes of Mexico to two additional locations and we're growing! The Assistant Kitchen Manager (AKM) at El Encanto supports the Kitchen Manager in all of his/her responsibilities. The AKM is responsible for all aspects of managing kitchen operations and the kitchen staff. Including prep, dish and cook teams. Is able to work all line stations and knowledgeable of all prep items. Ability to train, develop and hold others accountable to El Encanto policies and food safety standards. Participates in food ordering/purchasing. Inventory cost control procedures.
The Asst Kitchen Manager (AKM) must at all times promote, work and act in manner consistent with the Mission Statement and Core Values of El Encanto Restaurants.
PRIMARY RESPONSIBILITES AND DUTIES
Oversee daily operations of the kitchen, including food preparation, cooking ticket times, and presentation. Leading team on the line during shift volume with focus on quality and speed.
Interview, train, and supervise staff providing feedback on performance.
Ensure that each new hire is trained according to El Encanto Training Procedures.
Hold self and team accountable to follow all safety and quality standards.
Manage inventory and control food costs by monitoring portion sizes and minimizing waste.
Manage back of house labor costs effectively including event labor costs.
