Overview

The Thai Specialty Chef is responsible for preparing authentic Thai cuisine and ensuring the highest quality of food production in accordance with the hotel’s culinary standards. The role involves menu development, maintaining ingredient authenticity, supervising kitchen staff, and ensuring consistent flavor and presentation that reflect the rich traditions of Thai gastronomy.

Responsibilities
  • Prepare and cook authentic Thai dishes with precision, consistency, and creativity.
  • Develop and refine Thai menu offerings, incorporating seasonal ingredients and guest preferences.
  • Ensure all dishes meet established taste, texture, and presentation standards before service.
  • Maintain quality control and consistency in all food preparation and service.
  • Train and guide kitchen staff in Thai cooking techniques, ingredient handling, and presentation.
  • Monitor inventory levels of Thai ingredients and coordinate with the purchasing team for replenishment.
  • Ensure compliance with food safety, hygiene, and sanitation regulations.
  • Collaborate with the Executive Chef and culinary team to plan special promotions, events, and themed menus.
  • Oversee kitchen operations during service to ensure efficiency and timely food delivery.
  • Maintain cleanliness and organization of the Thai kitchen section and equipment.
Qualifications
  • Minimum 3–5 years of experience as a Thai Chef or in a similar role within a reputable hotel or restaurant.
  • Professional culinary certification or equivalent training in Thai cuisine preferred.
  • Extensive knowledge of traditional Thai cooking techniques, spices, and ingredients.
  • Strong sense of taste and presentation with attention to detail.
  • Familiarity with food safety, HACCP, and hygiene standards.
  • Passionate about authentic Thai cuisine and committed to maintaining its cultural integrity.
  • Flexibility to work shifts, weekends, and public holidays as required.
