Located within the luxurious Mondrian Hotel, Firebird offers an elevated dining experience that marries traditional techniques with a sophisticated atmosphere.

We are seeking an experienced and passionate Sous Chef with a strong background in Japanese cooking techniques to join our team. The ideal candidate will work alongside an experienced Japanese chef and play a crucial role in maintaining the high standards of our woodfire yakitori offerings, ensuring consistency, quality, and excellence in every dish.

Key Responsibilities
  • Assist the Head Chef in overseeing daily kitchen operations, including food preparation, cooking, and plating.
  • Lead and manage kitchen staff, ensuring effective training, supervision, and motivation.
  • Ensure consistent quality and presentation of dishes, meeting our restaurant’s high standards.
  • Maintain high standards of hygiene, food safety, and sanitation in accordance with health regulations.
  • Manage inventory, order supplies, and control food costs to maximize profitability.
  • Collaborate with the team to innovate and improve recipes and cooking methods.
  • Contribute to menu development and design, incorporating authentic Japanese techniques and flavors.
Qualifications
  • Proven experience as a Sous Chef or in a similar role, with a strong background in Japanese cuisine and techniques.
  • Experience working with woodfire cooking methods is highly desirable.
