Position Statement

A Hygiene Manager supervises and manages the Hilton Food Safety Management System (HFSMS) for the entire F&B and Culinary operation in the hotel, directs, coaches and trains team members to enhance the team’s skills. He/ she works with the operational teams on a daily basis to ensure Hazard Analysis Critical Control Point (HACCP) and HFSMS standards are adhered to, and Food Safety production remains consistent.

What will you be doing?

As the Hygiene Manager, you will be responsible for performing the following tasks to the highest standards:

Food Safety & Hygiene Management
  • Responsible for the entire HACCP & HFSMS program.
  • Schedule, conduct, and follow up on HACCP and HFSMS meetings.
  • Supervise hygiene procedures, monitor logbooks, hot and cold service holding units to ensure proper food turnover and cleanliness.
  • Implement corrective actions when food does not comply with HACCP standards.
  • Emphasize FIFO (First In, First Out) and date labelling systems.
  • Handle guest food poisoning cases, conduct investigations, and issue reports.
  • Check and ensure garbage room hygiene and approved garbage classification methods.
Audit, Reporting & Compliance
  • Responsible for daily F&B audits, action plans, and reports.
  • Drive the Continuous Improvement Programme for HACCP & HFSMS accreditation.
  • Work with auditing and enforcement personnel during inspections, guiding corrective actions.
  • Report defective equipment or service provider issues to Technical Services and Purchasing.
  • Maintain compliance with food safety standards and regulatory requirements.
Training & Cross-Functional Collaboration
  • Train and guide all Culinary and F&B team members on food safety and hygiene matters.
  • Streamline and ensure adherence to training requirements for HACCP and HFSMS.
  • Communicate with the Director of Food, Beverage & Culinary Operations, Executive Chef, and Executive Sous Chef on all aspects of HACCP & HFSMS.
  • Act as a liaison with other departments and external agencies, including high-level public and private contacts.
  • Control supplier interactions and escalate non-conformities to relevant departments.
  • Collaborate with Supply Management to procure only approved, safe food items.
  • Support informed decisions on centrally purchased equipment and long-term replacement strategies.
Sustainability & Environmental Responsibility
  • Collaborate with F&B leadership and Chief Steward to advance sustainability initiatives (e.g., food waste management, local sourcing).
  • Oversee safe and environmentally responsible disposal of food-related waste.
  • Partner with Engineering for capital expenditure planning related to equipment and infrastructure.
