A dynamic food establishment in Singapore is seeking a skilled Head Cook to manage the Chicken Rice production and lead the kitchen team. You will ensure quality, train junior staff, and maintain high standards of food safety and hygiene. Ideal candidates have extensive culinary experience and a passion for Chinese/Singaporean cuisine, especially Hainanese Chicken Rice.

We are looking for a dedicated and skilled Head Cook to lead our signature Chicken Rice station and production team.
In this hands-on leadership role, you will be primarily responsible for the execution, quality, and consistency of the Chicken Rice production, overseeing daily operations, and supervising a small team of kitchen assistants during service hours within a fully Halal-compliant environment.
The Role:
We are seeking a highly skilled and passionate Head Cook with specialized experience in Chinese/Singaporean cuisine, particularly in Chicken Rice preparation (including poaching, roasting, and stock mastery).
In this hands-on leadership role, you will be primarily responsible for the execution, quality, and consistency of the Chicken Rice production, overseeing daily operations, and supervising a small team of kitchen assistants during service hours.
Key Responsibilities:
Production & Quality Control (Chicken Rice Focus)
Hands-on Production: Execute all steps of the Chicken Rice preparation process personally, ensuring precise standards for chicken quality, stock flavour, and rice texture are met every time.
Consistency & Training: Implement and enforce basic kitchen Standard Operating Procedures (SOPs) and portion control guidelines specifically for the Chicken Rice station. Train and guide junior kitchen staff on preparation techniques.
Service Flow: Maintain consistent food quality and speed during peak operating hours.
Operational Supervision
Daily Inventory: Manage daily ordering and receiving of ingredients specific to the Chicken Rice station, minimizing spoilage and waste.
Shift Supervision: Lead the kitchen production team during designated shifts, ensuring tasks are completed efficiently and on time.
Compliance & Safety: Ensure the assigned station and BOH team adhere to strict SFA (Singapore Food Agency) hygiene and food safety standards.
Requirements and Qualifications:
Experience: Minimum 4-5 years of hands-on culinary experience, with at least 1-2 years in a leadership or supervisory role within a high-volume F&B setting.
Specialization: Proven, deep expertise in preparing Hainanese and/or Roasted Chicken Rice and related Chinese side dishes.
Supervision: Strong communication skills and the ability to effectively supervise and motivate junior staff.
Certification: Possess a valid WSQ Food Hygiene or equivalent certification.
Attitude: Highly organized, meticulous about food quality, and reliable in meeting production goals.
Local F&B Knowledge: Familiarity with the local F&B operational environment, supplier chains, and adherence to specific Singaporean culinary standards is a strong asset.
