Job Description
We are looking for an experienced and skilled Head Baker to lead and oversee the bakery production operations. You will be responsible for managing the entire baking process, ensuring product quality, supervising the bakery team, and developing new recipes that meet our standards of taste and presentation. You will be the key person in charge of maintaining consistency, efficiency, and hygiene in the bakery.
Responsibilities
- Check the freshness and quality of ingredients such as flour, butter, yeast, and other baking materials
- Supervise and coordinate activities of bakers, pastry staff, and other production workers
- Develop and test new bakery products, recipes, and seasonal items
- Plan daily/weekly production schedules ensuring adequate supply for retail and wholesale
- Ensure consistent quality, taste, texture, and appearance of all bakery products
- Oversee the preparation, mixing, proofing, baking, cooling, and finishing processes
- Inspect baking tools, ovens, equipment, and work areas for cleanliness and functionality
- Control and direct the bakery production process and maintain standard operating procedures
- Maintain proper portioning, shaping, and decoration standards
- Approve finished bakery products before display or dispatch
- Monitor inventory levels and plan orders for ingredients based on production needs
- Ensure compliance with food safety, hygiene, and bakery sanitation rules
- Train and mentor junior bakers and production staff
- Collaborate with management on menu updates, pricing, and seasonal promotions
- Reduce wastage and maintain efficient use of raw materials
Requirements
- Minimum 3 years of proven experience as a Head Baker, Senior Baker, or Lead Pastry/Bread Specialist
- Strong knowledge of bread-making, pastries, cakes, dough handling, and baking techniques
- Exceptional ability to manage bakery operations and handle multiple production tasks
- Ability to divide responsibilities and monitor staff progress effectively
- Excellent communication and leadership skills
- Up-to-date with modern baking trends, artisan techniques, and production optimization
- Strong understanding of food safety standards (HACCP/Food Hygiene)
- Ability to work early-morning shifts and in a fast-paced production environment
