Position Overview

The North Indian Chef is responsible for preparing, cooking, and presenting authentic North Indian dishes with consistency, creativity, and high quality. This role requires deep knowledge of North Indian cuisine, ingredients, and traditional cooking techniques, while ensuring kitchen efficiency, food hygiene, and excellent teamwork.

Culinary Preparation & Cooking
  • Prepare and cook a wide range of authentic North Indian dishes, including curries, tandoori items, breads, gravies, and biryanis.
  • Ensure consistency in taste, presentation, and portion control across all dishes.
  • Oversee the tandoor section — including marination, grilling, and maintaining tandoor temperature and cleanliness.
  • Innovate and contribute new dish ideas or seasonal menu specials aligned with Atithi Kitchen’s concept.
Kitchen Operations & Coordination
  • Coordinate with the kitchen team to ensure timely food preparation and delivery during service hours.
  • Monitor stock levels of spices, ingredients, and supplies; communicate replenishment needs to the Head Chef or Purchasing team.
  • Assist in food cost management by minimizing waste and optimizing ingredient usage.
  • Maintain clear communication with the service team to ensure smooth coordination between kitchen and dining areas.
Hygiene, Safety & Quality Control
  • Maintain a clean and organized kitchen workspace in compliance with SFA (Singapore Food Agency) hygiene and safety standards.
  • Ensure proper storage, labeling, and rotation of ingredients according to FIFO principles.
  • Regularly check the freshness and quality of raw materials and prepared dishes.
  • Follow strict personal hygiene and kitchen cleanliness standards at all times.
Teamwork & Training
  • Supervise and train junior kitchen staff in North Indian culinary techniques and kitchen discipline.
  • Promote teamwork and a positive work environment among kitchen colleagues.
  • Assist in cross-training team members to ensure flexibility during peak periods.
Requirements
