As Chef Manager, you will manage the full spectrum of kitchen operations, including food preparation, cooking processes, and timely food delivery during service hours. You will ensure that all dishes meet established standards for taste, presentation, and portion control. You will also be responsible for implementing and maintaining standard recipes and kitchen operating procedures to ensure consistency across all shifts. You will play a key role in menu planning and development, including seasonal menus and festive set menus. Strong cost control skills are essential, as you will monitor food cost, manage inventory, minimize wastage, and work closely with suppliers to source quality ingredients at competitive prices.

Responsibilities

  • Exercise strong cost control: monitor food cost, manage inventory, minimize wastage, and collaborate with suppliers to source quality ingredients at competitive prices.
  • Lead, supervise, and train kitchen staff, including sous chefs, cooks, and kitchen assistants.
  • Manage staff scheduling, task allocation, and performance management to maintain a motivated and productive team.
  • Ensure food safety and hygiene compliance, adhering to all SFA / NEA regulations, including proper handling, storage, cleanliness, and documentation.
  • Collaborate with front-of-house teams and management to ensure smooth operations, handle customer feedback when required, and support banquets, events, and large-scale orders.
