Job Responsibilities
- Support the Executive Chef / Executive Sous Chef and the team in ensuring the efficient preparation for all aspects of kitchen operations.
- Act as a coordination point for communication between Team Members, Executive Chef and Executive Sous Chef.
- Establish grooming standards that adhere to company policies and industry standards.
- Assist Executive Chef and Executive Sous Chef in elaboration of menus, recipe cards, and plating guides.
- Be responsible for food production from delivery to guest plate; control step‑by‑step preparation.
- Ensure quality of food items per standards, including sanitary condition and FIFO practice.
- Monitor production compliance with recipes and specifications, adhering to presentation, production, and portioning controls.
- Be hands‑on in timely pre‑preparation before rush hours and for next day “Mise en Place” requirements.
Job Requirements
- Comply with and ensure hygiene policies are strictly adhered to daily; relentlessly check and control cooks against standards.
- Maintain high cleanliness and sanitation in all culinary work areas; ensure colleagues clean stations after each service.
- Ensure safe and proper use of equipment and instruct colleagues accordingly.
- Able to demonstrate a positive attitude and take pride in work, reflected in product for guests.
- Report to work on time as per culinary department schedules; report sickness or absence using correct procedures.
