The candidate will work closely with the Head Chef to prepare sushi and related dishes, maintain kitchen operations, and uphold the highest standards of food quality and hygiene.

  • Learn and practice traditional Edo‑mae techniques with precision and consistency
  • Ensure cleanliness and organization of the sushi counter and kitchen area
  • Liaise with local suppliers for ordering and receiving ingredients
  • Maintain food safety and hygiene standards according to SFA guidelines
  • Assist in menu preparation, mise en place, and stock control
Requirements
  • Strong desire to learn traditional Edo‑mae sushi at Michelin‑class level
  • Integrity: must be honest and reliable, with no tolerance for dishonesty
  • Punctuality: able to follow strict schedules and time management
  • Prior experience with ordering from local suppliers is preferred
  • Must own and be proficient with a full set of Japanese kitchen knives (和包丁一式)
  • Ability to work in a fast-paced, detail‑oriented environment
  • Willingness to work evenings, weekends, and public holidays as required
