Overview

Position Overview

The Assistant BBQ will be responsible for contributing to roast poultry section of the Chinese kitchen and Banquet kitchen, delivering consistent food quality aimed at creating great experience for guests manage food cost controls through good management of orders and supplies to Capella.

The Role

Kitchen Operations

  • Preparation of all bbq items for the a la carte menu and function BEO to ensure that they are in compliance with the prescribed recipes and specifications
  • Understand the basic philosophy of the company. Implement and energize company philosophy in their daily work
  • Ensuring all ingredients for marination, poultry for bbq are ordered with required amount for events, banquets or restaurant are ready
  • Determine the required mise-en-place according to the menu orders
  • Check the store requisitions prepared by subordinates. Ensure that the received products meet the predetermined quality and purchasing specifications
  • Monitor the supply of food items and review wastage for appropriate adjustment in future preparation.
  • Ensure the proper handling and storage of food so as to keep spoilage to a minimum
  • Ensure that the workstations are clean and sanitized and prepare safety procedures are observed by the cooks at all times
  • Ensure that all operating equipment are in good working conditions and advise supervisor to raise repair and maintenance request when necessary
  • Assist supervisor in creating new dishes and arranging sample tasting for management
  • Assist supervisor in monthly stock taking activities
  • Support ownership and accountability for the profitability of their outlet
  • Assist with inventories as scheduled
  • Assist in plating up special event meals as assigned
  • Follow maintenance program and cleaning schedule of the bbq area
