Job description

Job Purpose:

The R&D Assist Manager for Cold Cuts\ Product Development is responsible for leading the formulation, testing, and commercialization of cold cut meat products (e.g., pepperonis, hams, sausages, mortadella, deli meats). This role ensures product innovation, quality, and regulatory compliance while collaborating cross-functionally with production, QA, marketing, and procurement teams. The ideal candidate combines technical knowledge in meat science with hands-on development experience and project management skills.

Responsible to create formulation, update BOMs, manage specification, process optimization and re-engineer Americana products.

Support developments also in Kuwait.

Key Accountabilities:

Operational

  • Lead the development of new cold cut products from concept to launch.
  • Optimize formulations for texture, flavor, shelf life, and nutritional value.
  • Conduct ingredient screening, prototyping, and sensory evaluations.
  • Work on equipment selection, slicing performance, and packaging compatibility.
  • Maintain accurate technical specs, formulations, and SOPs.

Qualifications, Experience, & Skills:

  • Bachelor’s / master’s in food engineering\ technology, chemical Engineer, mechanical engineer
  • Minimum of 5 years of experience as R&D in a similar industry

Technical Skills:

  • Proficiency in computer skills MO
  • Ability to learn new systems for recipe and information management
  • PMO system (example: Monday, MS Project, Asana)
