Job Description

We are seeking a Pastry Chef to lead the pastry and bakery operations at Faena The Red Sea, driving creativity while upholding uncompromising standards of quality, style, and guest satisfaction. This hands‑on and strategic role oversees production, innovation, and execution across all culinary outlets—from fine dining and in‑room dining to large‑scale banqueting—while collaborating closely with the Executive Pastry Chef to shape the sweet expression of Faena’s culinary identity.

Key Responsibilities

  • Support the Executive Pastry Chef in designing and executing forward‑thinking, seasonal, and sustainable dessert menus across all outlets and events.
  • Ensure the highest standards of preparation, presentation, flavor, and consistency for all pastry and bakery items.
  • Lead daily pastry and bakery operations with precision, artistry, and a passion for craftsmanship.
  • Monitor recipe adherence, portion control, and product consistency in line with Faena brand and quality standards.
  • Drive culinary innovation through menu development, guest feedback, and evolving patisserie and bakery trends.
  • Oversee pastry production for restaurants, bars, in‑room dining, banquets, and special events.
  • Uphold culinary policies, SOPs, and regulatory requirements across all pastry operations.
  • Manage ordering, inventory, stock rotation, and waste control to support profitability and sustainability.
  • Monitor food cost performance and ensure optimal utilization of ingredients and resources.
  • Ensure all pastry equipment is maintained in safe working condition and report maintenance needs promptly.
  • Lead, train, mentor, and motivate pastry team members, fostering a positive, high‑performance kitchen culture.
  • Support workforce scheduling, task assignments, and daily supervision of the pastry brigade.
  • Deliver ongoing coaching and performance feedback; participate in evaluations, appraisals, and development planning.
  • Assist in recruitment, onboarding, and training of new pastry team members.
  • Enforce rigorous hygiene, sanitation, and food safety standards in compliance with HACCP and local health regulations.
  • Conduct routine inspections to ensure cleanliness, food storage, and operational readiness at all times.
  • Prepare the pastry kitchen for internal audits, external inspections, and quality reviews.
  • Collaborate closely with Front‑of‑House, Banqueting, Events, Purchasing, and Stores teams to ensure seamless service delivery.
  • Support special dietary requirements, personalized guest requests, and VIP experiences with discretion and care.
  • Maintain a visible kitchen presence during service periods when required.
  • Work with outlet chefs and F&B leadership to ensure creative alignment and consistent food quality across all venues.
Qualifications
