Mandarin Oriental Manila invites talented pastry professionals to join the pre-opening Pastry Kitchen as Chef de Partie - Pastry. You will oversee a section and ensure pastries, desserts, and baked items meet the highest standards in a luxury hotel setting.

Work with the Executive Pastry Chef, mentor junior staff, manage mise en place, and contribute to an exceptional dining experience for our guests in this dynamic pre-opening phase.

Qualifications

• Proven experience as Chef de Partie - Pastry or Demi Chef de Partie - Pastry in luxury settings.
• Strong knowledge of pastry desserts, cakes, breads, chocolates.
• Leadership and ability to develop junior colleagues.

Responsibilities

• Oversee daily operations of the Pastry section, ensuring high-quality pastries and desserts.
• Collaborate with Executive Pastry Chef and Sous Chef on menus and presentation standards.
• Prepare a variety of pastry items while maintaining exceptional taste, texture and presentation.
• Mentor Commis Chefs and junior staff with hands-on training on recipes and techniques.
• Maintain mise en place and ensure ingredients are available for daily operations.
• Monitor stock, storage, rotation and waste to maintain cost efficiency.
• Uphold the highest standards of food hygiene, safety, and cleanliness.
• Assist in pre-opening activities: kitchen setup, equipment testing and recipe trials.
• Coordinate with culinary and service teams to deliver an exceptional dining experience.

The Role

As Chef de Partie - Pastry, you will oversee a designated section of the Pastry Kitchen, ensuring that all pastries, desserts, and baked creations are prepared and presented to the highest standards of quality, creativity, and consistency. You will play an important role in supporting the Pastry leadership team, developing junior colleagues, and contributing to exceptional culinary experiences during this exciting pre‑opening phase.

Key Responsibilities

• Oversee and coordinate the daily operations of your assigned section within the Pastry Kitchen, ensuring consistent and high‑quality preparation of pastries, desserts, and baked items.
• Work closely with the Executive Pastry Chef and Sous Chef to execute menus, recipes, and presentation standards that reflect Mandarin Oriental’s commitment to culinary excellence.
• Prepare and present a variety of pastries, desserts, cakes, chocolates, and other pastry creations while maintaining exceptional standards of taste, texture, and presentation.
• Guide and mentor Commis Chefs and junior colleagues, providing hands‑on training and ensuring adherence to established recipes, preparation techniques, and quality standards.
• Maintain proper mise en place and ensure ingredients and products are prepared and available for efficient daily operations.
• Monitor stock levels, storage, rotation, and inventory within the assigned section while helping to minimize waste and maintain cost efficiency.
• Ensure the highest standards of food hygiene, safety, cleanliness, and sanitation are consistently maintained within the Pastry Kitchen.
• Support the pre‑opening preparation of the Pastry Kitchen, including kitchen setup, equipment testing, recipe trials, and operational readiness.
• Collaborate closely with culinary and service colleagues to ensure seamless delivery and an exceptional dining experience for our guests.

Qualifications & Experience

• Proven experience as a Chef de Partie - Pastry, or strong experience as a Demi Chef de Partie - Pastry, preferably within a luxury hotel, resort, or fine‑dining environment.
• Strong knowledge of pastry techniques, including desserts, cakes, breads, chocolates, and other pastry preparations.
• Creative flair with a strong eye for detail, presentation, and consistency.
• Good leadership and communication skills, with the ability to guide and develop junior colleagues.
• Strong organizational and time‑management skills, with the ability to perform effectively in a fast‑paced kitchen environment.
• Sound knowledge of food hygiene, safety, and sanitation standards.
• A positive, flexible, and collaborative approach, with the resilience and enthusiasm to thrive in a dynamic pre‑opening environment.
