About the role

Join the team at Jun Cuisine Enterprise Sdn Bhd as a full‑time Head Chef (Sushi Bar or Kitchen) in Ipoh, Perak. In this strategic role you will lead the culinary operations of our renowned sushi bar and kitchen, ensuring exceptional dining experiences for guests and overseeing the day‑to‑day management of the kitchen team.

What you'll be doing
  • Develop and execute innovative Japanese‑inspired menu items, drawing on your extensive knowledge of authentic cuisine.
  • Manage and mentor the kitchen staff, providing training and guidance to maintain high standards of food preparation and presentation.
  • Oversee the ordering, inventory, and cost control of ingredients and supplies to maximise efficiency and profitability.
  • Ensure strict adherence to all health, safety, and hygiene regulations within the kitchen environment.
  • Foster a positive and collaborative working culture that encourages teamwork and continuous improvement.
  • Collaborate with the restaurant management team to develop strategic plans for growth and development.
What we're looking for
  • Minimum 6 years of experience as a Head Chef or in a similar senior culinary leadership role, preferably within the hospitality or Japanese cuisine industry.
  • Proven expertise in Japanese cuisine, with a strong understanding of sushi preparation, air‑flown fish prepping, fresh stock keeping, presentation techniques, and other related techniques.
  • Excellent leadership and people management skills, with the ability to motivate and develop a high‑performing kitchen team.
  • Strong business acumen, including expertise in inventory management, cost control, and operational efficiency.
  • Exceptional attention to detail and a commitment to maintaining the highest standards of food quality and customer service.
  • Excellent communication and interpersonal skills, with the ability to collaborate effectively with various stakeholders.
