Responsibilities

Based at the Mandarin Oriental, Kuala Lumpur / within the Culinary Department in Kuala Lumpur, the Executive Chef is responsible in supervising the entire culinary operation. Ensures a good working environment and colleague relations throughout the kitchen and responsible for the training and professional development of all kitchen colleagues. The Executive Chef reports to the Director of Food & Beverage / Hotel Manager.

  • The Executive Chef takes the full responsibility of the food quality and strives for fully delighting our customers within the culinary operation.
  • Foster positive thinking and motivation within all kitchens by giving active assistance and advice on more effective ways of running the kitchens.
  • Plan in conjunction with F&B management, activities, special events, menu implementations according to the annual marketing plans.
  • Ensure that all designated action points from daily briefings or bi‑monthly operational meetings are being followed by the individuals concerned.
  • Guide all the senior chefs and Chief Steward/ Senior/Assistant Chief Stewards in decision‑making and judgement.
  • Ensures grooming standards on punctuality, uniforms and personal hygiene are a priority.
  • Follows up guest comments to establish solutions appropriate to problems highlighted and to take ownership of their work and follow ups.
Qualifications
  • Minimum Degree holder, preferably Graduate of a Hotel School would be an added advantage.
  • 5 years’ experience in relevant position.
  • 4 years of international, preferably Asian and western experience.
  • Experienced in large banquet operations.
  • Possess strong leadership qualities.
