Job description

Responsible for preparing, cooking, and ensuring all dishes are served according to taste, quality, and hygiene standards. Ensures smooth and organized kitchen operations while complying with company SOPs.

Scope of Work

Prepare ingredients and cook daily menu items (Western, Malay Ala Carte, East Coast dishes, or Ala Carte).

Maintain quality, cleanliness, and proper storage of raw ingredients.

Ensure the kitchen is clean, safe, and organized at all times.

Manage basic stock and report shortages to the supervisor.

Key Responsibilities
A. Food Preparation & Cooking

Prepare ingredients including cutting, marinating, organizing, and arranging mise en place.

Cook dishes according to standard recipes, ensuring taste, color, aroma, and presentation are consistent.

Control cooking time, temperature, and techniques based on dish requirements.

Ensure timely delivery of food, especially during peak hours.

B. Quality Control

Ensure raw ingredients are fresh and properly stored.

Monitor kitchen equipment cleanliness and functionality.

Ensure all food served meets company standards.

Operate cooking equipment safely, including fryers, grills, ovens, woks, and stovetops.

Maintain a clean and organized workspace before, during, and after operations.

Assist in receiving and arranging stock using FIFO (first in, first out) method.

Report any equipment malfunctions or kitchen issues to the supervisor.

Comply with food hygiene, safety regulations, and kitchen SOPs.

Practice personal hygiene and proper uniform usage.

Handle sharp, hot, and heavy kitchen equipment carefully.

E. Teamwork & Communication

Collaborate with Head Chef, Kitchen Supervisor, and other team members.

Communicate effectively during service to ensure smooth kitchen workflow.

Assist in other tasks as required.
