Job Title: Sous Chef (Ya Yuen Chinese Restaurant)

Position Summary

The Sous Chef is responsible for the day-to-day culinary operations of Ya Yuen. You will lead a specialized team to deliver high-quality Cantonese dishes, ensuring consistency in taste and presentation. A major focus of this role is maintaining the delicate balance between traditional authentic flavors and modern plating, all while strictly adhering to Halal and HACCP standards.

Key Responsibilities

Culinary Excellence & Production

  • Oversee the wok, dim sum, and barbecue sections to ensure every dish meets the signature "Ya Yuen" standard.
  • Assist the Executive Chinese Chef in developing seasonal menus and promotional dishes (e.g., Chinese New Year, Mooncake Festival).
  • Personally conduct food tastings and inspections of mise en place to ensure freshness and correct seasoning.

Operational Management

  • Ensure the kitchen strictly adheres to JAKIM Halal requirements and maintains 5-star HACCP hygiene protocols.
  • Manage the kitchen workflow during peak lunch and dinner services, acting as the primary "expeditor" to ensure timely food delivery.
  • Monitor the quality of premium ingredients (dry seafood, live tanks, specialized spices) and manage ordering to minimize food waste.

Leadership & Training

  • Train junior chefs and Commis on specific Cantonese techniques, such as "wok hei" and intricate knife skills.
  • Manage duty rosters for the Chinese kitchen team to ensure optimal coverage for both the restaurant and Chinese banquet functions.
Requirements & Qualifications
  • Experience: Minimum of 5–8 years in a Chinese kitchen, with at least 2 years in a Senior CDP or Sous Chef role within a luxury hotel or high-end Chinese restaurant.
  • Cuisine Expertise: Deep knowledge of Cantonese cuisine, including specialized techniques in wok cooking and sauce preparation.
  • Halal Knowledge: Strong understanding of Halal food preparation is essential, as Ya Yuen is a Halal-certified specialty restaurant.
  • Leadership: Proven ability to lead a multicultural team and work under high-pressure "rush" periods.
  • Education: Professional Culinary Certification or Diploma in Culinary Arts.
