Chief Steward – The Riyaz Lavanya Langkawi

We are looking for an experienced and hands‑on Chief Steward to lead our Stewarding Department and ensure smooth, efficient, and hygienic kitchen operations. This role requires strong leadership, deep understanding of hygiene practices, and the ability to maintain high standards across all back‑of‑house areas.

Key Responsibilities
  • Lead, train, and supervise the stewarding team to ensure high productivity.
  • Oversee cleanliness and sanitation of all kitchen areas, equipment, utensils, and BOH facilities.
  • Develop and implement SOPs for hygiene, safety, and cleaning procedures.
  • Manage inventory of cleaning supplies, chemicals, and stewarding equipment.
  • Coordinate with the Head Chef and F&B team to support operational needs.
  • Ensure compliance with HACCP, food safety, and hotel audit standards.
  • Reduce breakage, control operating equipment usage, and manage waste.
  • Maintain dishwashing machines, ensure proper operation, and schedule servicing.
  • Prepare stewarding schedules, duty rosters, and performance reports.
Requirements
  • Minimum 3–5 years experience in stewarding leadership roles (hotel or resort preferred).
  • Strong knowledge of cleaning procedures, hygiene standards, and kitchen operations.
  • Proven ability to lead teams and manage manpower effectively.
  • Strong organizational, communication, and problem‑solving skills.
  • Ability to work in a fast‑paced, high‑volume environment.
  • Physically fit and capable of overseeing a BOH operation.
