Job summary

Healthkart in Gurugram, Haryana seeks an experienced Food R&D Scientist to lead the development of protein bars and functional foods from concept to pilot-scale validation. You will optimize texture, binding, moisture, solubility and stability, oversee sensory evaluation, and ensure FSSAI labeling and claims while collaborating with Quality, Regulatory, Manufacturing and Marketing teams.

Required 4–8 years in nutrition/protein bar development with a background in Food Technology or Dairy

Qualifications

• M.Tech/B.Tech in Food Technology, Food Science, Dairy Technology required.
• Experience in R&D / product development of nutrition bars or protein bars.
• Knowledge of shelf life, moisture management, flavor masking is preferred.

Responsibilities

• Develop bars and functional foods with binding, texture, moisture and shelf-life expertise.
• Lead formulation optimization for protein products, blends, solubility and mouthfeel.
• Run lab and pilot-scale trials for beverages, RTM/RTD/RTE and nutrition products.
• Perform market benchmarking, prototype development and sensory evaluation.
• Evaluate ingredients for function, quality, nutrition and cost-saving alternatives.
• Develop process parameters, run pilot/scaling trials and troubleshoot processing.
• Plan stability and shelf-life studies, support specs and documentation.
• Ensure compliance with FSSAI labeling and claims; collaborate across teams.

Job description

• Develop protein/energy/nutrition bars and functional foods, with expertise in binding systems, texture, moisture management, processing and shelf life.
• Lead formulation development and optimization of protein products including protein blends, flavor masking, solubility/dispersibility, mouthfeel and nutritional performance.
• Develop and optimize food, functional food, beverages, RTM/RTD/RTE and nutritional products through laboratory and pilot-scale trials.
• Conduct market benchmarking, prototype development and sensory evaluation to deliver consumer-acceptable products.
• Evaluate ingredients and technologies for functionality, quality, nutrition and commercial feasibility; identify alternate ingredients for cost optimization.
• Develop process parameters, conduct pilot/plant trials and scale-up, and troubleshoot formulation/manufacturing issues related to solubility, texture, viscosity, binding, stability and processing.
• Plan and monitor stability and shelf-life studies and support product specifications and technical documentation.
• Ensure formulations and product information align with FSSAI requirements, labelling and applicable claims.
• Collaborate with Quality, Regulatory, Manufacturing, Procurement, Packaging and Marketing teams.
