About the Role

As a Sushi Sous Chef, you'll play a key role in elevating our world‑class culinary offering—delivering exceptional sushi preparation, supporting a multicultural team, and ensuring superior production within your allocated area. Reporting to the Head Sushi Chef, you will work closely with culinary leaders and team members across the resort to maintain excellence in quality, safety, presentation, and guest satisfaction.

Key Responsibilities
  • Prepare high‑quality sushi including Maki, Nigiri, Sashimi and other traditional styles, ensuring consistency, flavour, and exceptional presentation.
  • Maintain strict HACCP, HSE, hygiene, and food safety standards, ensuring a clean, well organised work environment.
  • Collaborate with senior culinary leaders on menu development, product innovation, and quality enhancement.
  • Customise sushi orders based on guest preferences and allergy requirements, ensuring excellent communication with service teams.
  • Oversee mise en place, general food preparation, portioning, and inventory management to support smooth daily operations.
  • Train, guide, and support team members to uphold Adare Manor's standards and foster continuous development.
  • Manage stock ordering, minimise wastage, ensure correct labelling, and maintain accurate product traceability.
  • Participate in special events and functions, delivering exceptional culinary experiences aligned with resort standards.
Who You Are

We are looking for someone who is highly skilled, detail focussed, quality driven and passionate about delivering exceptional culinary experiences.

You will thrive in this role if you have:

  • A minimum of 6 years’ experience in upscale sushi restaurants or luxury 5‑star hotels
  • Proven expertise in preparing Maki, Nigiri, Sashimi, and other traditional sushi techniques
  • Experience working in high‑end culinary environments with strict standards
  • Strong communication, time‑management, and customer service skills
  • Technical knowledge of HACCP, food safety, and kitchen systems
  • A proactive, hands‑on approach and a genuine passion for culinary excellence
  • The ability to work under pressure and stand for extended periods
  • A commitment to team development, collaboration, and continuous improvement
