Job summary

Mulranny Park Hotel in Mayo is seeking a Senior Chef de Partie to join our kitchen team. Support the Executive Head Chef and Sous Chefs, supervise junior chefs, and deliver high-quality dishes to hotel standards.

You will manage a section, uphold HACCP and hygiene standards, and work flexibly including weekends in a fast-paced environment, collaborating with the kitchen team to ensure excellent guest service.

Qualifications

• 2+ years experience in a similar role.
• Knowledge of HACCP and experience in practice.
• Strong knowledge of food preparation and kitchen operations.
• Ability to work well under pressure in a fast-paced environment.
• Good teamwork and communication skills.
• Flexibility to work shifts, including weekends.

Responsibilities

• To assist the Executive Head Chef and Sous Chefs with the overall running of the kitchen and all back of house areas.
• Supervise and mentor junior chefs, ensuring consistency and quality.
• Prepare and present high-quality dishes in line with hotel standards.
• Manage a designated section of the kitchen efficiently.
• Ensure food hygiene and health & safety standards are maintained.
• Assist senior chefs with menu planning and daily operations.
• Work collaboratively with the kitchen team to deliver excellent service.
• Prepares and properly garnishes food orders as they are received in accordance with recipes and proper plate presentation.
• Ensures close down of section in accordance with departmental procedures and standards.
• To take direction from the department managers and to assist in the monitoring of food quality and hygiene standards.
• To adhere to HACCP procedures at all times.
• To ensure all kitchen staff observe appropriate systems of hygiene during food preparation and storage.
