Responsibilities
  • To assist the Head Chef in the smooth running of the kitchen ensuring that all areas of the kitchen are maintained to Fairmont St Andrews standards.
  • Working together with the Head Chef to supervise and coordinate the kitchen service with other departments
  • To ensure all health and safety, and food hygiene procedures and guidelines are followed rigidly and documented as necessary.
  • To coordinate, execute and fully document training of kitchen staff while motivating at all times.
  • To develop menus, keep costs and wastage down and maintaining food costs within various menu pricing.
  • To assist the other sections in preparing and cooking food according to business requirements.
  • To cook any food on a daily basis according to business requirements.
  • To assist the Head Chef in interviewing and recruiting staff for the kitchen.
