COREcruitment Ltd is seeking a Sous Chef for a high-volume premium pub in Central London. You will lead a 45-strong brigade, manage prep and service for around 600 covers daily, and train chefs to exact specifications.

The role focuses on set recipes, strict systems and consistent quality. We offer £21-£23/hour, paid weekly, with guaranteed hours over 5 days and a supportive brigade.

Responsibilities

• Own food standards, digital checks and compliance, with complete records.
• Support kitchen operations alongside the wider sous team.
• Maintain a settled core menu with seasonal additions throughout the year.
• Keep kitchen clean, organised and running to tight systems.
• Collaborate with senior kitchen team to ensure daily consistency.

Sous Chef - High-Volume Premium Pub - Central London 21-23 per hour

A Sous Chef role in one of London's busiest premium pub kitchens, built on tight systems, precise recipes and a big, well-trained team.

This Sous Chef opportunity is with a highly acclaimed premium pub and dining rooms in Central London, serving around 600 covers a day across a busy bar, restaurant and private dining. The kitchen runs a brigade of 45 chefs.

This is not a typical kitchen. Everything runs on clear systems, set recipes and consistency at volume. The Sous Chef plays a key part in leading the team, training chefs and keeping standards high every service. Junior Sous Chef applications are also welcome.

The Sous Chef role

• Lead shifts as Sous Chef in a 45-strong brigade, running prep and service at around 600 covers a day.
• Train, teach and develop chefs so every dish goes out to the same specification.
• Own food standards, digital checks and compliance, making sure records are complete and filed correctly.
• Support the people and operations side of the kitchen alongside the wider sous chef team.
• Follow and protect a settled core menu, with seasonal dishes introduced through the year.
• Keep the kitchen organised, clean and running to tight systems.
• Work closely with the senior kitchen team to keep the operation consistent day after day.

About you

• A Sous Chef or strong Junior Sous Chef from a high-volume, quality-led kitchen.
• A people manager who enjoys training and teaching as much as cooking.
• Comfortable working to set recipes and systems, with real attention to precision.
• Experience of big numbers in premium restaurant groups, busy pubs or large kitchens.
• Organised and confident with food safety records, checks and standards.
• Someone who wants to be part of a big team and enjoys operating at a high level.

The package

• £21-£23 per hour all in, depending on experience, paid weekly.
• guaranteed hours a week over 5 days, with every extra hour paid. That is roughly £50-£57k a year.
• A large, well-structured brigade with clear systems and support.
