Job summary

Qualifications

• Experience as Head Chef or Senior Sous Chef in high-volume catering.
• Strong HACCP and kitchen compliance knowledge.
• Experience in secure government, defence, or custodial environments.

Responsibilities

• Oversee day-to-day food preparation, cooking and service operations.
• Lead, mentor and schedule kitchen staff to maintain a high-performing team.
• Maintain strict adherence to Health and Safety, HACCP and custodial security protocols.
• Manage stock control, ordering, waste reduction and budgets.
• Plan nutritious, compliant menus suitable for diverse dietary needs.
