Job summary

Hotel Gotham Bristol is seeking a Rooftop Bar Manager to join the pre-opening leadership team. You will recruit and develop a high-performing rooftop bar team, define service standards, train staff, and set SOPs that define the Gotham five-star experience.

You should have a passion for cocktails and guest hospitality, superb communication, eye for detail, and the energy to bring the Gotham spirit to life from day one, delivering exceptional cocktail experiences in a iconic setting.

Responsibilities

• Assure exceptional product, service and menu knowledge through training and culture.
• Possess comprehensive knowledge of wine, cocktails, and beverage menus.
• Maintain cleanliness and ensure brand service standards are met.
• Set and maintain all policies and SOPs for the rooftop team.
• Ensure licensing compliance for alcohol service within the venue.
• Complete documentation and checks as per hotel standards.
• Proactively improve customer satisfaction and policies.
• Direct guests to appropriate team members when needed.
• Adhere to food safety and allergen regulations at all times.
• Ensure consistent presentation and service of all drinks.
• Engage with guests to upsell and enhance their experience.

As our Rooftop Bar Manager, you'll play a pivotal role as a member of the senior management team during the pre-opening phase of our breathtaking hotel. This is a fantastic opportunity to build and lead one of the city's most anticipated rooftop destinations, delivering exceptional cocktail experiences and five-star service in a truly iconic setting.

Working closely with the pre-opening leadership team, you'll recruit and develop a high-performing rooftop bar team, establishing service standards, training and Standard Operating Procedures that define the Gotham five-star experience.

We are looking for someone who genuinely lives and breathes cocktails, with natural charisma, an eye for detail and passion for creating unforgettable guest experiences. Someone who will bring the Gotham spirit to life while creating a vibrant rooftop destination renowned for its atmosphere, impeccable service and attention to detail from day one. You'll be as comfortable discussing a classic Negroni as you are leading a busy service, and you'll bring the energy, style and personality needed to make our rooftop bar one of Bristol's most talked-about destinations. After all, second best has never really been our style.

Your Key Responsibilities Will Include

• The assure an exceptional level of product, service and menu knowledge for the hotel venue through menu development, staff training and team culture
• Possess a comprehensive knowledge of wine, cocktails, and beverage menus.
• To ensure the team are consistently achieving high standards of cleanliness and brand service are achieved.
• Ensure the completion and efficiency of all standard checklists and that they are utilised
• To set and maintain all standard policies and procedures for the rooftop team
• To be fully competent with the licencing laws and regulations for alcohol sale, and promote this within the rooftop team.
• To ensure all documentation, i.e. checks/bills are completed as necessary and carried out as per the Hotel and Company Standards
• To proactively review and identify ways to improve customer satisfaction, procedures and policies within the venue
• Able and coherent in who to direct guests to if unable to answer queries
• To comprehend all procedures and regulations regarding food safety and allergens, always ensuring strict compliance with the standards and expectations
• Fully consistent with the presentation, delivery and service of all drinks within the venue
• Engage with guests to promote, upsell but most importantly enhance their journey and experience
